Chef Dan Robinson takes a breather and takes in the sights of Carson Street before dinner guests start arriving at Café du Jour. Robinson -- an Edinboro native who now resides on the South Side -- has run this cozy bistro for almost two years with partner Paul Krawiec, and the two cook side-by-side in their open kitchen. Having worked everywhere from fast-food joints to country clubs, Robinson jokes that his culinary degree comes from "The School of Hard Knocks," and describes his style as intuitive. "I'm all nose and eyeballs and taste buds. I have basic guidelines that I adhere to, but not structured technique. There are no recipes. Paul is the one with the training. Sometimes I'll call him over to taste something and ask, 'Hey, what have I done here?' and he'll tell me. For me, cooking is all sensual.
