Pittsburgh's Subversive Cocktails throws weekend charity pop-up to benefit 412 Food Rescue

Spencer Warren and Carrie Clayton, of Subversive Cocktails and Pop-Up Embury know how to throw a party. Beginning tonight and running through Sunday, they’ll be slinging drinks to support 412 Food Rescue at their latest — a summer-themed charity pop-up bar. Warren and Clayton will be joined by bartenders Vanessa Comimski and Elliott Sussman. Chef Jamilka Borges, of Spoon, will take a guest bartending shift on Sunday night.

Expect summery creations made with fresh local produce. Since 412 Food Rescue works to reduce food waste and recover foods that may be tossed aside, the crew will be making shrubs and syrups, which allow the recovered foods to keep longer. A fresh spiced-berry cocktail, for example, riffs on a Cosmo  and uses berries from local markets, while a Madeira sherry mule will use peaches. “We want to make this as fun and exciting as all of our other pop-ups,” says Warren.

Curtis Gamble, chef/owner of Station in Bloomfield, is providing the space and will be closed for dinner service for the run of the pop-up (Station will continue to serve lunch). Pittsburgh Taco Truck will be in residence outside from 7 p.m. to midnight daily for those who want some food with their drink. Sidewalk seating will be available.

Stay tuned later this summer for more to come from Warren and Clayton, with the projected opening of Mr. Rogers, A Neighborhood Bar after Labor Day. Set to be located Downtown at 245 Seventh St., the space will include a wine shop, as well as cocktails, beers and wines by the glass. The love of themes will live on in the form of cocktails inspired by the shows playing next door at the Benedum Center. The establishment will also partner with Penn Avenue Fish company to serve lunch.
